a singularly toothsome red

From Jumilla (pronounced “hoo-mee-a”) comes this Spanish red ‘El Molar’, named for the tooth-shaped mountain visible from the vineyards and depicted on the label.  Made by Casa Castillo, acknowledged as the best producer in the region, this wine is unusual for Jumilla in not being based on Monastrell (a.k.a. Mourvèdre); instead it is a pure Garnacha.
It’s also a rare example of a red that isn’t oaky and yet still tastes quintessentially Spanish.  With its warm, earthy fruit and gamey, herby, balsamic-scented nose, this wine couldn’t come from anywhere else.

Serve this smooth and savoury red at cool room temperature (17°C to 18°C) with manchego cheese, black olives, and meaty tapas dishes like the local speciality michirones, a broad bean, chorizo and ham stew mopped up with crusty bread.
For more substantial fare pair it with paler roast meats like pork and turkey, or with rich stews featuring cabbage and chickpeas served with rice.
