we revisit this wonderful French red in time for Bastille Day

It's Bastille Day on 14th July so to commemorate, we're drinking this very unusual, nay revolutionary, wine.
Carignan is the commonest red wine grape that most drinkers have never heard of! Because it is so hard to ripen, it takes considerable skill to produce an unblended Carignan wine that tastes as good as this.

The winemakers have used old vines planted on the driest, sunniest sites, and a whole slew of techniques like green harvesting to limit yields, so that the vines can concentrate their resources on ripening fewer grapes.

Serve at cool room temperature - 17°C or 18°C.
The crisp acidity and clean brambly fruit make this wine very food-friendly. Red meats and hearty stews are obvious pairings, but I also found it went well with robust pasta sauces and other herby, tomato-ey Italian dishes like Cacciatore. If you want to keep things French, try ratatouille.
Black olives go very well, either in dishes or just on their own, echoing the flavours in the wine.
