Molinara wine grape
The classic blend for Valpolicella in all its forms, including Amarone, Recioto and Ripasso is Corvina, Rondinella and Molinara. All three varieties are native to the Veneto: the region of northeast Italy around Venice and Verona that is home to Valpolicella.
Pale-skinned, light-bodied Molinara brings freshness to the blend. Its high acidity is particularly useful in Amarone and Recioto production, because the drying process causes acid levels to drop. However, it is prone to oxidation and its use is declining.
