Pungent pair put down Aussie roots

The pungent pair are Sémillon and Sauvignon Blanc, which both yield aromatic, grassy, green-scented wines.  The Sem-Sauv blend is the basis of all white Bordeaux, be it the fresh, unoaked, early-drinking style most often seen; or the powerful, oaked, ageworthy whites of Pessac-Léognan and Graves; or even the great botrytised sweet wines of Sauternes.
 
The rest of the world makes Sauvignon Blanc as a varietal wine, in the style of Sancerre or Marlborough, and hardly grows Sémillon at all.  But there are a few places that follow the white Bordeaux model.  Chief amongst them is Margaret River in Western Australia, where the Sem-Sauv partnership has found a second home.
 
From Deep Woods Estates, this is a classic and classy example that has won gold medals at three major Aussie wine shows.  Rather more subtle than, say, a Marlborough Sauv Blanc, its grassy, nettle-and-gooseberry pungency is balanced by ripe citrus and green apple fruit, and there’s just enough weight to the palate to ground its zingy, mouthwatering acidity.
 
But beware!  If you stray into Deep Woods you may find yourself Lost in A Forest.  Luckily we have a Cure for that…

The nicely rounded fruit makes this crisp dry white dangerously quaffable despite that firm acidity.  Fortunately the moderate 12.5% alcohol allows for more quaffing than usual!  Unoaked and very fresh, it should be served cooler than most whites but not as cold as most Sauvignon Blanc: 8 to 10°C.
 
On first opening the bottle this did smell a bit reductive – not really stinky but enough to mute the citrus scents.  This is quite common with screw-tops and is readily fixed by decanting the bottle in advance; try to give it 20 minutes.
 
Assertive enough to stand up to strong and sharp flavours, this is a wine that really suits capers, either in sauces like tartare or in salads.  Conversely, its roundness and balance allow it to partner a greater range of dishes than a typical Sauv Blanc, though goat’s cheese would still be great.  It’s particularly good with oriental starters, like tempura or spicy Thai soups, and it’s terrific with sushi.  If staying Western, try it with white fish in lemon and herb butter.
