a Roman red you'll never forget

From vineyards in the rolling hills just 10 kilometres west of the Eternal City, this red is as Roman as it’s possible to get.  Certified organic, its unusual name comes from fossils of the prehistoric European Elephant (Elephas antiquus) which were found while excavating a new winery cellar in 1938.  We hope it will linger in your memory as long as it would in that of its namesake!
 
Unoaked and just medium-bodied, this fresh and herby red will benefit from being served a bit cooler than usual: around 15°C.
 
You can cheerfully quaff this one on its own but it is a perfect pasta and pizza red, especially for Roman specialities like spaghetti amatriciana or pizza capricciosa.

Unoaked and just medium-bodied, this fresh and herby red will benefit from being served a bit cooler than usual: 15°C to 16°C.  If you open the pouch straight from the draughty doormat it should be about right.  If it has warmed up to centrally-heated room temperature then you should give it just 30 seconds in the fridge.
 
Italians make their wine, and especially their red wine, with food in mind.  Pasta “like Mama used to make” must have been precisely what was on the winemakers’ minds when they made this, although pizza might work equally well.  The high acidity here is perfectly suited to tomato-ey sauces, while the light tannins and moderate alcohol make it suitable for dishes with some chilli heat too.
 
Since this is probably the closest you can get to a red made in Rome itself, it seems appropriate to pair it with a Roman speciality.  Spaghetti all'Amatriciana fits the bill perfectly, and features the touch of chilli and lots of tomatoes that this wine seems tailor-made for.
